  • 5 cups mixed greens
  • 1 cup blueberries
  • 1 cup cherry tomatoes
  • 1/4 cup slivered almonds
  • 2 cups cubed chicken breasts, cooked


  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup blueberries
  • 2 Tbsp honey
  • salt and pepper to taste


  1. In a large bowl, toss the blueberries, greens, almonds, cherry tomatoes and chicken breasts. Mix well.
  2. Salad dressing: put the olive oil, apple cider vinegar, blueberries, and honey in a blender and blend until smooth.
  3. Season to taste.
  4. Serve and enjoy!
