- 5 cups mixed greens
- 1 cup blueberries
- 1 cup cherry tomatoes
- 1/4 cup slivered almonds
- 2 cups cubed chicken breasts, cooked
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1/4 cup blueberries
- 2 Tbsp honey
- salt and pepper to taste
- In a large bowl, toss the blueberries, greens, almonds, cherry tomatoes and chicken breasts. Mix well.
- Salad dressing: put the olive oil, apple cider vinegar, blueberries, and honey in a blender and blend until smooth.
- Season to taste.
