The Ultimate 3in1 Thanksgiving Pie!

It is not Thanksgiving Dinner if you don’t go over the top. This year you don’t have to choose between pecan pie, apple pie, or pumpkin pie as you can have them all in one ultimate combo pie that will tickle all your taste buds, even the ones you didn’t know you had. We are talking about Pecapplekin Pie!

Ingredients

For pecan filling you’ll need:

  • 2 tbsp. butter
  • 1 cup pecans (roughly chopped)
  • 2 tbsp. brown sugar
  • 1/4 cup corn syrup
  • 1/2 tsp. vanilla extract
  • 1 egg

For apple filling you’ll need:

  • 2 tbsp. butter
  • 3 Granny Smith apples (peeled, cored and diced)
  • 1/3 cup sugar
  • 1/3 tsp. cinnamon
  • Pinch of salt
  • 1 tbsp. flour

For pumpkin filling you’ll need:

  • 3/4 cup pumpkin puree
  • 1/4 cup evaporated milk
  • 1/2 tsp. pumpkin pie spice
  • 1/3 cup sugar
  • Pinch of salt
  • 1 egg

Ingredients for assembly:

  • 4 refrigerated store-bought pie crusts
  • 1 egg (beaten)
  • Sugar

Step By Step Preparation

1. Preheat the oven to 375°.

2. The pecan filling prep: Melt butter in a skillet and add pecans. Stir until toasted, then turn off the heat and stir in brown sugar, corn syrup, and vanilla.

Let it cool in a bowl, then stir in the egg.

3. The apple filling prep: Melt butter in a skillet, then add apples. Cook for 2 minutes (or until the apples are soft). Add sugar, cinnamon and salt, and cook for 2 more minutes. Remove from heat and stir in the flour.

Transfer to a bowl and let it cool.

4. The pumpkin filling prep: Put all ingredients in a bowl and stir thoroughly until combined.

5. The assembling:

  • Place one crust on the bottom of a 9-inch pie plate and press against the edges.
  • Top with pecan filling.
  • Cut 1.5 inches around the edges of the second dough round and place on top of pecan filling. Press at the edges so it will seal nicely.
  • Do the same with pumpkin filling, and then with the apple filling.
  • Add the top layer of crust, crimping at the edges to seal.
  • Make 4 cuts in the top for ventilation.
  • Brush the top of the pie with the beaten egg and sprinkle with sugar.

6. Bake for 30 minutes, or until golden brown (yes, just like the song).
